Loaded Mashed Potato Casserole

This is a great recipe if you are having a big dinner. It is super easy to make and doesn’t take much time at all.

Ingredients:

5 1/2 cups mashed potatoes (6-7 large baking potatoes)

1/2 cup milk

1 (8 oz) package cream cheese

1 cup sour cream

2 teaspoons dried parsley

1 teaspoon garlic salt

1/4 teaspoon ground nutmeg

1 cup shredded cheddar cheese

8 slices bacon crispy cooked and crmbled

Instructions

1. Preheat oven to 350 degrees

2. Boil potatoes until soft, drain, and beat until smooth

3. Add milk, cream cheese, sour cream, parsley, garlic salt, and nutmeg

4. Beat until nice and creamy

5. Spoon into 9×13 baking dish. Top with cheddar cheese and bacon

6. Bake for 30 mins.

They are sooo good, you will definitely want seconds. Then you will feel really full, but it is worth it! They are good leftover too!

Chicken Casserole

I know it is late posting, but better late then never, right?? Easy and delicious dinner recipe below. Perfect for a weeknight meal and great for leftovers for lunch the next day!

Ingredients:
  • 4-5 boneless, skinless chicken breasts
  • 6 strips of quality bacon – cooked and crumbled
  • 2 cans cream of chicken soup
  • 2 cups shredded Monterrey Jack cheese
  • 1 box (16 ounces) dried spiral pasta
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
Instructions:
  1. Cook and crumble bacon. While bacon is cooking, cut chicken into bite-sized chunks.
  2. Set cooked bacon aside for later use.
  3. In the same pan, cook chicken in bacon drippings.
  4. Add garlic powder and salt and pepper to taste.
  5. While chicken is cooking, prepare pasta according to directions.
  6. Spray a 9×13 baking pan with non-stick cooking spray.
  7. Drain pasta, return to pot.
  8. Add chicken, both cans of cream of chicken soup, 1 cup of Monterrey Jack cheese – stir to mix well.
  9. Pour into prepared baking dish.
  10. Top with crumbled bacon.
  11. Top with remaining cup of Monterrey Jack cheese.
  12. Bake at 400 for about 20 minutes, just until cheese is melted and beginning to brown on top.

Dairy Free Potato Soup

It is a cold one in Florida today, rainy and 65 degrees. Yes that is cold to us Floridians. It is a great day for soup. I LOVE potato soup and was happy to find a dairy free recipe for it. The last time I made something dairy free it didn’t go well so I was a bit nervous for this. It actually tasted great and it is an easy recipe. Dad loved it and he had no idea it was dairy free, well now he does! Recipe below!

Ingredients
  • 8 russet potatoes, diced into cubes
  • 4 cups chicken stock
  • 1 cup coconut milk
  • ¼ cup coconut cream
  • salt and pepper, to taste
  • 8 slices bacon, cooked and crumbled
Instructions
In a large pot, add in the potatoes, chicken stock, coconut milk, coconut cream, and 4 slices of the bacon crumbled. Cook on medium-heat with a lid for about an hour, or until the potatoes are tender. Add in salt and pepper, to taste.

If you want to put a little dairy in and sprinkle some cheese on top you can.

It does have a coconut taste to it, but not in an overpowering way. I don’t like coconut and I thought this was perfect. I didn’t use chicken stock, I used chicken broth, so either way it works. It is really good, you will definitely enjoy it. It is perfect for those cold days and it only takes about an hour to make.

Quick Weekday Meal

The work week is hectic and if you are anything like me, the last thing you want to do when you get home is cook. Well, I have just the meal for you! It will take you less than 10 minutes to make it, and everyone in your household will love it! It is definitely one of those, I don’t feel like cooking, but my family needs to eat kind of meals. Pair it with some Mac and Cheese and dinner is ready!

In my family this is called Cheese Dreams. I don’t know why it is called that, but that is what mom called it when I was younger so that is what it is called! I used bread from Jimmy Johns, but you can use any type of bun. All you do is slap on a piece of cheese to each piece of the bun and put on as much bacon as you desire. Then, put it in the oven (I put it on broil) until the cheese is melted and bacon is cooked. Finally, EAT! This is almost as easy as making cereal for dinner. Give it a try, I think you will love it because who doesn’t love cheese and bacon!!

I am still working on that timing in the kitchen thing, so mine got a little burnt while I was mixing up the Mac and Cheese. Even a little burnt it was still delicious. Just a little tip from my experience tonight: make sure you keep an eye on it while it is in the oven, because it melts very quickly!
