3 Ingredient Pancakes

I have been seeing this recipe on Pinterest pretty much since I joined the site. I have always wanted to try it, but I never buy bananas. It is not my favorite fruit. I had an extra banana though this weekend and decided to give this a whirl. At first thought, I didn’t really know how this would turn out. The only food I like bananas in is banana bread, so I was skeptical.

Ingredients:

1 Large Banana

2 Eggs

Cinnamon (optional) – I didn’t measure, I just poured some in.

Directions:

1. Mash up banana really well. No big chunks.

2. Whisk the mashed banana, 2 eggs, and cinnamon. I whisked the eggs before adding the banana and cinnamon, then I whisked it all together.

3. Pour into pan. I used a frying pan on the stove and set the heat to medium. I also sprayed my pan with pam before pouring in the batter.

Tip: I wouldn’t make them very big because you may not be able to flip them.

It actually makes a good amount of pancakes, I would have had more than 5, but my first batch was really runny and I couldn’t flip them. It took a minute for me to figure out how much to pour in the pan in order for it too work.

My statement above still stands, I only like bananas in banana bread. I did not like these at all. The banana taste was too much for me and I felt like I was eating banana eggs. They came out very thin though and had I liked them, I would be really excited about this recipe. Give it a try and let me know your thoughts. Don’t let my pickyness deter you!

German Pancakes

I have seen this recipe be called many things, German Pancakes or Dutch Baby, either way they are delicious. I am going to call them German Pancakes because well, I am German. They are so light they don’t make you feel as full as normal pancakes do. They are great for loading up with toppings too and it kind of feels like eating dessert at breakfast. Recipe below:

  • 1 cup milk (I used vanilla almond milk, to keep it dairy free)
  • 6 eggs
  • 1 cup flour
  • ½ tsp. salt
  • 1 tsp. vanilla
  • ¼ cup butter, melted
  1. Preheat oven to 400 degrees
  2. Blend first six ingredients in a blender, make sure it is smooth. No chunks!
  3. Blend in melted butter after everything is blended
  4. Grease muffin tins and fill half way with batter
  5. Bake for 15 minutes
  6. They should peel right out of the tin if you greased it enough. I used PAM spray and it worked perfectly!

Makes about 18-24. You can also make it in a big baking dish. I liked using the muffin tins because then everyone can have their own and it forms a cup to load up with toppings. I cut the recipe in half and it made 11 pancakes.

For toppings, I used bananas, strawberries, blueberries, chocolate chips, powdered sugar, and whip cream.

Very delicious breakfast, you can use any topping you want. Very light so you can eat more! Mom and Dad gave it the seal of approval, so go make it!
