BLT Pasta Salad

Happy Memorial Day Weekend!! Having a BBQ and need the perfect side dish? The one below is very delicious and super easy to make. Recipe below.

INGREDIENTS2 1/2 cups bow tie pasta

6 cups torn romaine lettuce

1 medium tomato, diced

4 bacon strips, cooked and crumbled

1/2 cup ranch dressing

1 Tablespoon barbecue sauce

1/4 teaspoon pepper

INSTRUCTIONS

1. Cook pasta according to package directions. Drain. Then rinse pasta under cold water.

2. In a large bowl, combine the romaine lettuce, tomato, bacon and pasta.

3. Drizzle the ranch dressing and barbecue sauce over the top. Gently toss to coat evenly. Season with pepper. Serve immediately.


I would put it in the fridge to cool a bit before adding the dressing and serving, but either way is fine. It was really good and you can decided to put more or less dressing depending on your preference. Thanks Life in the Lofthouse for posting this recipe!

Loaded Mashed Potato Casserole

This is a great recipe if you are having a big dinner. It is super easy to make and doesn’t take much time at all.

Ingredients:

5 1/2 cups mashed potatoes (6-7 large baking potatoes)

1/2 cup milk

1 (8 oz) package cream cheese

1 cup sour cream

2 teaspoons dried parsley

1 teaspoon garlic salt

1/4 teaspoon ground nutmeg

1 cup shredded cheddar cheese

8 slices bacon crispy cooked and crmbled

Instructions

1. Preheat oven to 350 degrees

2. Boil potatoes until soft, drain, and beat until smooth

3. Add milk, cream cheese, sour cream, parsley, garlic salt, and nutmeg

4. Beat until nice and creamy

5. Spoon into 9×13 baking dish. Top with cheddar cheese and bacon

6. Bake for 30 mins.

They are sooo good, you will definitely want seconds. Then you will feel really full, but it is worth it! They are good leftover too!
